Quick and Flavorful Skillet Steak and Potatoes

**Ingredients:**


*For the Potatoes:*

- 3 tablespoons olive oil

- 1 pound Yukon Gold or red potatoes, cut into 3/4-inch wedges

- 1/2 teaspoon kosher salt


*For the Steak and Garlic Butter:*

- 2 (1-inch-thick) rib-eye or New York strip steaks (approximately 12 ounces each), or 1 pound sirloin steak, cut into two pieces

- 1 teaspoon kosher salt

- 4 tablespoons (1/2 stick) unsalted butter

- 3 cloves garlic, minced

- 2 tablespoons freshly chopped parsley leaves

- 1 teaspoon lemon juice, plus more to taste

- Salt and pepper, to taste


**Preparation:**


1. Heat olive oil in a skillet over medium-high heat.


2. Carefully add the potato wedges, placing them cut side down in the hot oil. Sprinkle with salt and allow to cook for 10 minutes.


3. Flip the potatoes to the other cut side and cook for an additional 10 minutes until golden brown and crispy. Set aside.


4. Using a paper towel, wipe the skillet clean.


5. Season each portion of steak with salt and pepper, then pat dry with paper towels.


6. Place the steaks into the hot skillet and cook for about 1 minute on each side until a crust forms.


7. Flip the steaks and repeat for a total of four minutes, ensuring they are cooked to your desired doneness.


8. Carefully add the butter to the pan and flip the steaks one more time. Tilt the pan to pool the melted butter, then add the minced garlic.


9. Spoon the melted butter and garlic over the steaks, basting them continuously for additional flavor.


10. Transfer the steaks to a cutting board and let them rest for 5 minutes.


11. Meanwhile, stir in the parsley and lemon juice into the pan juices. Taste and adjust seasoning with salt and lemon juice if needed.


12. Arrange the cooked potatoes on a serving dish.


13. Slice the rested steak against the grain into 1/2-inch thick slices and place them on top of the potatoes.
