Peanut Butter Balls (Buckeye Balls)

Peanut Butter Balls are a super simple, no-bake treat that are great any time of the year. Sometimes called buckeye balls, these sweet and salty peanut butter balls are dipped into dark chocolate and are irresistible!


**Ingredients:**


- 16 oz. peanut butter

- 1 pound confectioners sugar

- 1/2 teaspoon vanilla extract

- 3/4 cup (1.5 sticks) butter

- Melted chocolate bark for dipping

- Optional: coconut pecan cake icing and coconut flakes for added texture and flavor


**Instructions:**


1. **Prepare the Mixture:**

   - In a large bowl, mix together the peanut butter, confectioners sugar, vanilla extract, and butter until well combined and smooth.


2. **Form the Balls:**

   - Roll the mixture into small balls, about 1 inch in diameter. Insert a toothpick into each ball to make dipping easier.

   - Place the balls on a cookie sheet lined with wax paper.


3. **Chill the Balls:**

   - Chill the peanut butter balls in the freezer for about 30 minutes to firm them up.


4. **Dip in Chocolate:**

   - Melt the chocolate bark in a microwave-safe bowl or using a double boiler.

   - Dip each peanut butter ball into the melted chocolate, leaving a small portion of the peanut butter exposed at the top if desired.

   - Place the dipped balls back on the wax paper-lined cookie sheet.


5. **Set the Chocolate:**

   - Allow the chocolate to set by refrigerating the dipped balls until the chocolate is firm.


6. **Optional Additions:**

   - For a new taste, you can mix in coconut pecan cake icing and coconut flakes into the peanut butter mixture before rolling into balls.


7. **Store:**

   - Best stored in the refrigerator to keep them firm and fresh.
