Smothered Chicken with Creamed Spinach, Bacon, and Mushrooms

This easy, gluten-free, low-carb Mediterranean-style recipe is packed with protein and vegetables. Perfect for a healthy yet indulgent meal!


**Ingredients:**


**Chicken:**

- 1 tablespoon butter

- 1.5 lb chicken breast (skinless, boneless)

- Salt

- ¼ teaspoon lemon pepper seasoning

- ¼ teaspoon paprika


**Creamed Spinach:**

- 1 tablespoon vegetable oil

- 10 oz fresh spinach

- 4 garlic cloves, minced

- ⅔ cup half and half

- ⅔ cup mozzarella cheese, shredded


**Additional Ingredients:**

- 1 tablespoon vegetable oil

- 4 oz mushrooms, sliced

- 4 slices bacon, cooked and chopped

- 4 slices Pepper Jack cheese (or Monterey Jack Cheese with Jalapenos)


**Instructions:**


1. **Preheat Oven:**

   - Preheat your oven to 375°F (190°C).


2. **Prepare the Chicken:**

   - Butter the bottom of a baking dish (13 inches x 9 inches x 4 inches deep).

   - Season the chicken breasts on both sides with salt, lemon pepper seasoning, and paprika.

   - Place the chicken breasts flat side down in the greased baking dish and bake for 15-20 minutes.


3. **Make the Creamed Spinach:**

   - Heat 1 tablespoon vegetable oil in a large skillet over medium heat.

   - Add spinach and cook for 1-2 minutes, covered, until wilted.

   - Remove from heat, add minced garlic and half and half, and bring to a boil.

   - Add shredded mozzarella cheese, stirring on high heat until the cheese melts (about 30 seconds).

   - Reduce heat to simmer, stirring until smooth (about 1 more minute). Season with salt to taste and remove from heat.


4. **Cook the Mushrooms:**

   - In a separate pan, heat 1 tablespoon vegetable oil over high-medium heat.

   - Add sliced mushrooms and cook for 1-2 minutes until caramelized. Do not salt the mushrooms to ensure proper caramelization.


5. **Assemble the Smothered Chicken:**

   - Remove the chicken breasts from the oven.

   - Top each chicken breast with the creamed spinach, chopped bacon, and cooked mushrooms.

   - Place slices of Pepper Jack cheese on top.

   - Return the chicken to the oven and bake, uncovered, for an additional 15-20 minutes until the chicken is cooked through and the cheese is melted. Broil for the last 2-4 minutes if desired, watching carefully to avoid burning the cheese.


6. **Serve and Enjoy:**

   - Let the chicken rest for a few minutes before serving.

   - Enjoy your delicious, protein-packed, and vegetable-rich smothered chicken!


This dish pairs well with a simple side salad or a serving of cauliflower rice for a complete low-carb meal.
