This baked chicken recipe features a touch of brown sugar in the seasoning, which helps create a flavorful semi-sauce as the chicken sweats while baking. The high cooking temperature ensures a delicious, crispy crust. Use the color of the crust to determine when the chicken is cooked through.

**Ingredients:**

- 3 lb chicken legs or wings

- Cajun seasoning

- Onion powder

- Garlic powder

- Poultry seasoning

- Chicken broth (1/3 cup)

- 1 onion, chopped

- 1 green bell pepper, chopped

- 2-3 garlic cloves, minced

- Salt

- Pepper

- Brown sugar (optional, to taste)

**Instructions:**

1. **Season Chicken:**

   - Season the chicken liberally with Cajun seasoning, onion powder, garlic powder, poultry seasoning, salt, and pepper to taste. If using, add a touch of brown sugar to the seasoning mix.

   - Refrigerate the seasoned chicken for 1 to 2 hours, or up to overnight, to allow the flavors to meld.

2. **Prepare for Baking:**

   - Preheat your oven to 400°F (200°C).

   - Spread the chopped onion, green bell pepper, and minced garlic evenly on the bottom of a baking dish.

   - Place the seasoned chicken on top of the vegetables.

   - Pour 1/3 cup of chicken broth into the bottom of the dish.

3. **Bake the Chicken:**

   - Bake the chicken uncovered in the preheated oven for a total of 45-50 minutes.

   - At 20-minute intervals, baste the chicken with the drippings collected in the bottom of the pan to keep it moist and flavorful.

4. **Check for Doneness:**

   - The chicken is done when the crust is a deep golden brown and the internal temperature reaches 165°F (74°C).

   - Use a meat thermometer to ensure the chicken is thoroughly cooked.

5. **Serve:**

   - Remove the chicken from the oven and let it rest for a few minutes before serving.

   - Serve the baked chicken hot, with the roasted vegetables from the bottom of the pan and the semi-sauce created by the drippings.
