Roasted Mushrooms in Balsamic and Garlic Soy Glaze

Ingredients:


- 2 pounds mushrooms

- 1 tablespoon oil

- 3 tablespoons balsamic vinegar

- 2 tablespoons soy sauce (or tamari)

- 3 cloves garlic, chopped

- 1/2 teaspoon thyme, chopped

- Salt and pepper to taste


#### Directions:


1. **Preheat Oven:**

   - Preheat your oven to 400°F (200°C).

   - Lightly grease a large baking sheet or pan with nonstick cooking oil spray.


2. **Prepare Mushrooms:**

   - Wipe the mushrooms clean with a damp paper towel to remove any dirt or debris.


3. **Marinate Mushrooms:**

   - In a large bowl, combine the mushrooms with the oil, balsamic vinegar, soy sauce, chopped garlic, chopped thyme, salt, and pepper. Toss the mushrooms to evenly coat them in the marinade.


4. **Arrange and Roast:**

   - Arrange the marinated mushrooms in a single layer on the prepared baking sheet.

   - Roast the mushrooms in the preheated oven for 15-20 minutes, stirring them halfway through cooking, until they are tender and caramelized.


5. **Serve:**

   - Remove the mushrooms from the oven and serve hot.
