#### Ingredients:

  - 1 ½ cups plus 1 tbsp all-purpose flour

  - 3 large eggs

  - 1 cup granulated sugar

  - ½ tsp vanilla extract

  - ½ cup vegetable oil

  - 2 tsp lemon zest

  - 1 ½ cups fresh or frozen blueberries

  - 2 to 3 tbsp lemon juice

  - 1 cup sifted confectioner’s sugar


#### Directions:


**1. Preheat and Prepare:**

   - Preheat the oven to 350°F (175°C).

   - Grease the sides and bottom of a loaf pan.


**2. Mix Dry and Wet Ingredients:**

   - In a large bowl, sift together all-purpose flour and baking powder.

   - In another large bowl, mix together eggs, granulated sugar, yogurt or sour cream, salt, vanilla extract, vegetable oil, and lemon zest until well combined.

   - Slowly add the dry ingredients to the wet ingredients, stirring until just combined.


**3. Fold in Blueberries:**

   - In a separate bowl, toss the blueberries with 1 tablespoon of flour to coat.

   - Gently fold the flour-coated blueberries into the batter until evenly distributed.


**4. Bake:**

   - Pour the batter into the prepared loaf pan.

   - Bake for 50 to 55 minutes, or until a toothpick inserted into the center comes out clean.

   - Remove the bread from the oven and let it cool in the pan for 10 minutes.

   - Carefully remove the loaf from the pan and transfer it to a wire rack to cool completely.

   - Using a toothpick, poke holes all over the top and sides of the cooled loaf.

   - Allow the glaze to harden for 15 minutes before slicing and serving.
