This Baked Chicken recipe features a touch of brown sugar in the seasoning, which makes the chicken sweat while it bakes, creating a delicious semi-sauce. Baking the chicken at a high temperature ensures a crispy crust. Use the color of the crust to know when it’s cooked through.

#### Ingredients:

- 3 lbs chicken legs/wings

- Cajun seasoning

- Onion powder

- Garlic powder

- Poultry seasoning

- Chicken broth

- 1 onion, chopped

- 1 green bell pepper, chopped

- 3 cloves garlic, minced

- Salt

- Pepper

#### Instructions:

1. **Season Chicken:**

   - Season the chicken legs/wings liberally with Cajun seasoning, onion powder, garlic powder, poultry seasoning, salt, and pepper.

   - Refrigerate for 1 to 2 hours, or up to overnight for best results.

2. **Preheat Oven:**

   - Preheat your oven to 400°F (200°C).

3. **Prepare Baking Dish:**

   - Spread the chopped onion, green bell pepper, and minced garlic evenly on the bottom of a baking dish.

   - Place the seasoned chicken on top of the vegetables.

   - Pour 1/3 cup of chicken broth into the bottom of the dish.

4. **Bake Chicken:**

   - Bake the chicken uncovered for a total of 45-50 minutes.

   - Baste the chicken with the drippings in the bottom of the pan every 20 minutes to keep it moist and flavorful.

5. **Check for Doneness:**

   - The chicken is done when it reaches an internal temperature of 165°F (74°C) and has a nice golden-brown crust.

6. **Serve:**

   - Let the chicken rest for a few minutes before serving.

   - Serve with your favorite sides and enjoy!
