Rich, hearty, and comforting, this Vegan Beef Stew is the perfect cozy dinner.


Ingredients:


- 1/2 tbsp canola oil

- 3-4 pounds chuck roast, cut into chunks

- 7-8 cups low-sodium vegetable broth

- 1/4 teaspoon freshly ground black pepper, or to taste

- 2 bay leaves

- 1 medium onion, chopped

- 2 ribs celery, chopped

- 2 carrots, peeled and chopped

- 2 garlic cloves, minced

- 1 tsp dried parsley

- 1/2 tsp dried oregano

- 1/2 tsp dried marjoram

- 1/4 tsp dried thyme leaves

- 1/4 tsp dried basil

- 2 medium potatoes, cubed

- 1/4 pounds green beans, trimmed and cut into bite-sized pieces

- 1 can small diced tomatoes

- 1 tbsp Worcestershire sauce (ensure it's vegan)


Directions:


1. In a Dutch oven or heavy stock pot, heat 1 1/2 tablespoons of canola oil over medium to medium-high heat. Add the chunks of chuck roast and sear until browned on each side. Add enough beef broth (about 3 cups) to cover the meat, along with black pepper and bay leaves. Simmer for 2 1/2 to 3 hours, or until the meat is fork-tender.


2. After the beef has simmered for about 2 hours, heat 1 tablespoon of canola oil in a separate Dutch oven or heavy stock pot over medium heat. Add the chopped onion, celery, and carrots. Cook for 5-7 minutes, or until the onion and celery are softened. Reduce the heat to low and add the minced garlic, parsley, oregano, marjoram, thyme, and basil. Cook for 1 minute, stirring constantly.


3. Add 4 cups of vegetable broth, potatoes, green beans, diced tomatoes, and Worcestershire sauce to the pot. Carefully transfer 1 1/2 cups of the broth in which you cooked the roast (discard bay leaves) to the vegetable mixture. Simmer until the vegetables are tender, about 20-30 minutes. Remove the cooked chuck roast from the pot and cool it on a cutting board. Use two forks to shred the meat, discarding any excess fat and cartilage. Add the shredded beef back to the pot and warm for an additional 5 minutes.
