Roasted Potatoes, Carrots, and Onions

This simple and delicious side dish combines potatoes, carrots, and onions tossed with oil, herbs, and spices for a satisfying and flavorful addition to any meal.


#### Ingredients:

- 2 pounds carrots

- 6 whole potatoes

- 1 whole sweet onion

- 3 cloves garlic

- 6 tablespoons olive oil

- ½ teaspoon dried thyme

- ½ teaspoon dried parsley

- Salt and pepper to taste


#### Directions:

1. **Preheat Oven**:

   - Preheat your oven to 475°F (245°C).


2. **Prepare the Vegetables**:

   - Peel the carrots and cut them into bite-sized pieces.

   - Dice the potatoes into bite-sized pieces, leaving the skin on for added texture and nutrients.

   - Cut the onion into eighths.

   - Mince the garlic cloves.


3. **Season the Vegetables**:

   - In a large bowl, combine the carrots, potatoes, and onion.

   - Drizzle the olive oil over the vegetables.

   - Add the minced garlic, dried thyme, dried parsley, salt, and pepper.

   - Cover the baking sheet with foil.

   - Roast in the preheated oven for 45 minutes.


5. **Finish Roasting**:

   - Remove the foil and continue roasting for another 30 minutes, or until the vegetables are golden brown.

   - Stir the vegetables every 10 minutes to ensure even roasting.


6. **Serve**:

   - Once the vegetables are roasted to your liking, remove them from the oven.

   - Serve immediately as a delicious and comforting side dish.
