Italian Drunken Noodles

This vibrant and hearty dish combines colorful bell peppers and spicy Italian sausage with wide, ribbon-like pappardelle noodles for a truly delightful meal.


#### Ingredients:


- 1 yellow bell pepper, cored and thinly sliced

- 1 (28 oz) can of diced tomatoes, with juice

- 1 orange bell pepper, cored and thinly sliced

- 4 spicy Italian sausage links, casings removed

- 8 oz. pappardelle noodles, uncooked

- Olive oil

- 4 cloves of garlic, pressed through a garlic press

- 1 red bell pepper, cored and thinly sliced

- 1 large onion, quartered and sliced thinly

- 1 tsp Italian seasoning

- 2 tbsp flat-leaf parsley, chopped

- ½ cup white wine (Chardonnay recommended)

- ¼ cup fresh basil leaves, julienned, divided use

- 1 ½ tsp salt

- ½ tsp cracked black pepper

- Parmesan cheese, for topping


#### Directions:


1. **Cook the Noodles:**

   - Follow the package instructions to cook the pappardelle noodles. Drain and rinse, then set aside.


2. **Prepare the Sausage:**

   - Heat 2 tablespoons of olive oil in a large pan over medium-high heat.

   - Add the spicy Italian sausage. Cook until the sausage is browned and crumbly. Transfer the browned sausage to a clean plate and set aside.


3. **Sauté the Vegetables:**

   - In the same pan, add the sliced onion and sauté for about 5 minutes until slightly caramelized. Season with salt, cracked black pepper, and Italian seasoning, stirring to combine.

   - Add the sliced bell peppers and sauté until they are softened.

   - Add the garlic and sauté for about 1 minute until aromatic.


4. **Deglaze the Pan:**

   - Pour in the white wine and stir, scraping up any browned bits from the bottom of the pan. Let it simmer for a few minutes until the wine reduces by half.


5. **Combine the Ingredients:**

   - Add the diced tomatoes with their juice to the pan and stir to combine. Sauté until the tomatoes are soft.

   - Return the cooked sausage to the pan and stir to mix everything together. Let it simmer for about 3 minutes until heated through. Remove the pan from the heat.


6. **Finish the Dish:**

   - Stir in 3 tablespoons of olive oil, freshly chopped basil, and parsley.

   - Add the cooked noodles to the pan and toss until they are well coated with the sauce.


7. **Serve:**

   - Serve the noodles hot, topped with Parmesan cheese and garnished with any remaining basil.
