Cheesy Sausage and Potato Bake

This comforting dish combines smoked sausage, tender potatoes, and a rich cheese sauce for a deliciously hearty meal.


#### Ingredients:

- 3 cups potatoes, peeled, boiled, and diced when cool

- 4 teaspoons butter

- 4 teaspoons flour

- 2 cups milk

- 1/2 teaspoon salt

- 1/4 teaspoon pepper

- 1/2 kilo (about 1 pound) Velveeta cheese, cut into cubes

- 1/2 cup shredded sharp cheddar cheese

- 1 pound skinless smoked sausage

- 1/8 teaspoon paprika


#### Instructions:

1. **Prepare the Sausage:**

   - Cut the skinless smoked sausage in half lengthwise, then slice into 1/2 inch "half moon" pieces.

   - Cook the sausage in a cast iron skillet over medium heat for about 15 minutes, stirring frequently, until slightly browned.


2. **Prepare the Potatoes:**

   - Place the cooked and diced potatoes into a 2-quart saucepan.


3. **Make the Cheese Sauce:**

   - In another saucepan, melt the butter over medium heat.

   - Add the flour, whisking constantly to form a roux, and cook for 1-2 minutes without browning.

   - Gradually whisk in the milk, continuing to stir until the mixture thickens and begins to bubble.

   - Add the salt, pepper, and Velveeta cheese cubes, stirring until the cheese is fully melted and the sauce is smooth.


4. **Combine and Bake:**

   - Preheat your oven to 350°F (175°C).

   - Add the cooked sausage to the saucepan with the potatoes, stirring gently to combine.

   - Pour the cheese sauce over the potato and sausage mixture, stirring to ensure everything is evenly coated.

   - Transfer the mixture to a greased 2-quart baking dish.

   - Sprinkle the shredded sharp cheddar cheese evenly over the top, followed by a sprinkle of paprika.


5. **Bake:**

   - Bake in the preheated oven for 35-45 minutes, or until the top is golden brown and the dish is bubbly.


6. **Serve:**

   - Let the dish cool slightly before serving to allow the sauce to set.
