This beef liver and onions recipe is quick, easy, and incredibly flavorful! The beef liver becomes tender, and the onions add so much flavor. This protein-packed meal is easy, healthy, and delicious!

#### Ingredients:

- 1 lb beef liver

- ¼ cup of flour

- ½ tsp of salt

- ⅛ tsp of pepper

- ¼-½ cup of butter

- Oil to taste

- 1-2 tbsp of fresh minced sage

- 2 cups of thinly sliced onions

- ½ cup of beef stock

- 1 tbsp of minced Italian parsley

- ¼ cup of dry white wine

#### Instructions:

1. **Prepare the Liver:**

   - Place the flour, salt, and pepper in a bag. Cut the liver into pieces about a half-inch thick, and place them in the bag. Shake the bag until the liver pieces are well-coated with the flour mixture. This will help to mellow the flavor of the liver.

2. **Sauté the Onions:**

   - In a skillet, heat 3 tablespoons of butter along with a little oil over medium-high heat. Add the sliced onions and sauté until they are tender and have a glossy sheen, about 5-7 minutes.

   - Remove the onions from the skillet and place them in a dish. Sprinkle with a little salt and pepper.

3. **Cook the Liver:**

   - In the same skillet, add another 4 tablespoons of butter and a dash of oil. Heat until the butter is melted and the oil is hot.

   - Add the liver to the skillet and cook for about 5 minutes, or until the liver is browned and cooked through.

4. **Combine Liver and Onions:**

   - Add the sautéed onions back into the skillet with the liver. Stir to combine and heat through for an additional 1-2 minutes.

5. **Deglaze the Skillet:**

   - Remove the liver and onions from the skillet and place them on a serving plate.

   - Add the beef stock and dry white wine to the skillet. Deglaze the pan by scraping up any browned bits from the bottom of the skillet. Cook until the liquid is reduced and forms a thick sauce, about 2-3 minutes.

6. **Finish and Serve:**

   - Pour the sauce over the liver and onions on the serving dish. Garnish with minced Italian parsley.

   - Serve hot and enjoy!

This dish pairs well with mashed potatoes or a side of vegetables for a complete meal. Enjoy the rich and savory flavors of this classic recipe!
