Apple Pie Bread Pudding

This comforting bread pudding combines the flavors of apple pie with a rich, custardy base. It's perfect served hot with a generous scoop of vanilla ice cream.
#### Ingredients:
**For the Bread Pudding:**
- 8 cups bread, cubed (preferably stale or dried out)
- 3 medium apples, peeled, cored, and chopped
- 4 eggs
- 1 cup vanilla yogurt
- 1 cup milk
- 2 tsp cinnamon, divided
- ½ tsp nutmeg
- ½ cup sugar + 2 Tbsp
- ½ cup raisins
**For the Sauce:**
- 1 cup unsalted butter
- 1 cup heavy cream
- 1 cup brown sugar
#### Instructions:
1. **Preheat Oven:**
- Preheat your oven to 350°F (175°C). Spray a 9×13 inch baking dish with cooking spray.
2. **Prepare Custard Mixture:**
- In a large bowl, whisk together the yogurt, milk, eggs, 1 tsp cinnamon, nutmeg, and ½ cup sugar until well combined.
3. **Combine Ingredients:**
- Stir in the chopped apples and raisins. Gently fold in the bread cubes until all the bread is well coated with the custard mixture.
4. **Transfer to Baking Dish:**
- Pour the mixture into the prepared baking dish, spreading it out evenly.
5. **Add Cinnamon Sugar Topping:**
- In a small bowl, mix together the remaining 2 Tbsp sugar and 1 tsp cinnamon. Sprinkle this mixture evenly over the top of the bread pudding.
6. **Bake:**
- Bake in the preheated oven for 30-40 minutes, or until the bread pudding is puffed and golden brown.
7. **Make the Caramel Sauce:**
- While the bread pudding is baking, prepare the caramel sauce. In a heavy saucepan over medium-low heat, combine the butter, heavy cream, and brown sugar. Stir constantly and bring to a boil.
- Reduce the heat to low and let it simmer, stirring occasionally, until the sauce thickens, about 5 minutes.
8. **Serve:**
- Once the bread pudding is done, remove it from the oven. Pour the warm caramel sauce over the top of the bread pudding before serving.
- For an extra indulgent treat, top each serving with a scoop of vanilla ice cream.
#### Notes:
- **Drying the Bread:** If your bread isn’t stale, you can dry the bread cubes in the oven. Spread them out on a baking sheet and bake at 350°F for 10-15 minutes until they’re dry but not toasted.
- **Make-Ahead Option:** This bread pudding can be assembled the night before and baked in the morning. The flavors meld together wonderfully if it sits overnight.
