- 1 cup granulated sugar
- 4 tablespoons lemon juice
- 1 (12 oz.) can evaporated milk, chilled
#### Instructions:
1. **Prepare the Jello:**
- In a medium bowl, dissolve the lemon jello in boiling water. Allow it to cool for 5-10 minutes, or until it thickens slightly.
2. **Make the Crust:**
- While the jello is cooling, mix 3 cups of graham cracker crumbs with the melted butter in a medium bowl.

- In a medium bowl, beat the chilled evaporated milk until it becomes whipped and fluffy, about 2-4 minutes.
4. **Prepare the Cream Cheese Mixture:**
- In a large bowl, beat the cream cheese, granulated sugar, and lemon juice together until smooth.
- Add the thickened jello to the cream cheese mixture and mix until well combined.
- Gently fold in the whipped evaporated milk until the mixture is smooth and uniform.
5. **Assemble the Cheesecake:**
- Spread the cream cheese filling evenly over the prepared graham cracker crust.
- Sprinkle the reserved graham cracker crumbs over the top of the filling.
6. **Chill:**
- Cover the cheesecake and refrigerate for at least 2 hours, or overnight, until it is fully set.
