One Pan Garlic Roasted Chicken and Baby Potatoes

This simple and flavorful recipe combines juicy roasted chicken with tender baby potatoes and caramelized garlic for a satisfying and easy-to-make meal.


#### Ingredients:

- 1/4 cup butter

- 6 chicken leg quarters, split into drumsticks and thighs

- 6 large Yukon Gold potatoes, cut into chunks

- 24 cloves garlic, unpeeled

- Salt and ground black pepper to taste

- 1/4 cup maple syrup


#### Directions:

1. **Preheat Oven:**

   - Preheat the oven to 400 degrees F (200 degrees C).


2. **Prepare Roasting Pan:**

   - Place the butter into a roasting pan and place it in the preheated oven.

   - Allow the butter to melt, then swirl to coat the bottom of the roasting pan.


3. **Prepare Chicken and Potatoes:**

   - Once the butter is melted, add the chicken drumsticks, thighs, potatoes, and unpeeled garlic cloves to the pan.

   - Sprinkle salt and black pepper over the chicken, potatoes, and garlic. Turn them to coat with the melted butter.


4. **Roast in Oven:**

   - Bake in the preheated oven for about 40 minutes, basting the chicken and potatoes with pan drippings 3 times during cooking.

   

5. **Add Maple Syrup:**

   - After 40 minutes, brush the chicken pieces with maple syrup and spoon pan drippings over the potatoes.


6. **Continue Roasting:**

   - Return the pan to the oven and continue baking until the chicken and potatoes are tender and browned, about 20 more minutes.

   - Use an instant-read thermometer to ensure the chicken reaches an internal temperature of at least 165 degrees F (74 degrees C).


7. **Serve:**

   - To serve, squeeze the soft roasted garlic from the cloves and spread it over the chicken.

   - Pour any remaining pan juices over the chicken and potatoes.
